The origins of Ricotta
This cheese is made from the whey that remains after making cheese. Normally the whey is thrown away, but the Italians found out that if you heat the whey one more time it clumps together again. Then they drain this curd well and what remains is the cheese we call Ricotta.
Fresh Ricotta is packaged in plastic containers/jars. You can get Ricotta in many supermarkets, but the really good Ricotta you buy at the cheese maker or at the caterer.
