Comté is probably one of the most widely eaten raw milk cheeses in Frankrijk. The cheese has been protected with the AOP label since 1958. Thus, only cheeses made under strict conditions, originating from the Jura mountains may be called Comté cheeses.
The cheese has a delicious spicy and nutty flavor caused by the food of the cows. This is because these cows are not allowed to be supplemented and eat only grass, herbs and flowers.
