The production process of white rind cheese

The Dutchies love it, white mould cheese. During the preparation of the cheese, a white mould culture is added. As the cheese matures in a temperature-regulated environment, a powdery white mould appears on the outside within 4-5 days. The mould layer causes the cheese to ripen from the outside in, giving it a velvety texture.

The different types of white rind cheese

There are three different types of rind cheese, white, red and blue rind cheese. Each type of mould cheese has its own characteristics and flavour. The better-known types of French white mould cheeses are Camembert and Brie. These white rind cheeses are extremely popular in The Netherlands.
