Langres is a French washed rind cheese made from whole cow's milk. This cheese is made in the town of Langres of the same name in the Champagne region and is made exclusively from the milk of cows from the departments of Côte-d'Or, Haute-Marne and Vosges. As such, this cheese bears the AOC seal that protects its authenticity.
Taste and structure of Langres cheese
This cheese has a smooth and moist rind that is slightly sticky. Beneath the rind is a soft and smooth cheese with a pungent aroma and powerful flavor. These characteristics make the Langres recognizable family of époisses, maroilles and munster.
Each Langres cheese is aged in a humid cellar and rubbed regularly with brine. This is done with a damp cloth, creating a layer of orange bacteria and a layer of yeast on the rind. This is how Langres gets its distinctive orange color.
