In our own traditional maturing house, these cheeses are matured on wooden boards. Our aged cheeses are given at least 12 months to mature.
During this time, a characteristic flavour develops, but the cheese remains deliciously creamy despite the time in the maturing house. To let the cheeses ripen evenly, they need to be turned with some regularity. Of course, we do this by hand for the best results.

Our whole Stolwijkse old cheese is a real treat weighing almost 13 kilos. Matured for at least a year in our traditional maturing house. A delicious tangy cheese for any cheese lover. Fantastic for on bread but also a real treat on a cheeseboard.
