Whole Truffle Cheese
Delicious young mature cheese made from the best thermised milk. When milk is thermised, it means that the milk is slightly heated before the cheese is made.
The milk is heated above 40 °C, but the temperature does not exceed 72 °C. From the this temperature, the milk is pasteurised.
The addition of Italian truffle gives this young mature cheese an intense flavour. A true delicacy you must have tasted once.
Italian black truffle
Cheese and truffle are a wonderful combination. This black truffle in our goat cheeses comes from Italië.
Good tuffles cannot be grown in Nederland, as this exclusive fungus needs a Mediterranean climate and chalky soil.
Truffles are not easy to find, growing underground on roots of various tree species.
To track down the truffles, dogs are often used to find this precious delicacy. When they find the truffles, it is important that they are well ripe, as only then the flavour comes out best.
Processing a whole truffle cheese
Truffle cheese is delicious to eat on the go or as a slice on a sandwich. Of course, it is also possible to serve a piece of truffle cheese on a cheeseboard.
