Sainte Maure is one of the best-known French goat cheeses and is made from raw goat's milk (therefore not suitable for pregnant women). Since 1990, this goat's cheese has already had an AOC seal that protects its authenticity. So you can be sure you are dealing with the real Sainte Maure, not a bland variant of it. A characteristic of this cheese is that there is always a straw running through the middle that makes the cheese a bit firmer. The name of this cheese comes from the Moors, who introduced goats to this region.
Taste and texture of Sainte Maure goat's cheese
The outside of the Sainte Maure has a layer of ash that creates a nice rind with a wrinkled appearance. On the inside, the cheese is snow-white and wonderfully soft in texture. The cheese tastes salty soft and is enriched with a nice walnut aroma.
