Door de extra lange rijping ontwikkelt de kaas een rijke, diepe smaak met licht pittige tonen, terwijl de structuur soepel en romig blijft. In het rijpingsproces krijgt de kaas alle tijd om zijn volle karakter te ontwikkelen.
