Gouda cheeses may only bear their name when they meet a number of strict requirements of their own:
- Only milk from 100% Nederland cows may be used for Gouda cheeses.
- The cheeses must be prepared according to traditional Nederlands recipe.
- The ripening process takes place on wooden boards.
