Meaning of the fat content in 48+ cheese

Many people are aware that 48+ cheeses are lower in fat than, say, a 50+ cheese or an 80+ cheese. Unfortunately, people often make the mistake of thinking that in the case of a 48+ cheese, the cheese consists of 48% fat, but this is absolutely not the case. In fact, a cheese consists of solids and of moisture. Generally, the distribution is 40% water and 60% solids. Because the fat content refers only to the solids, it can therefore never be the case that a 48+ cheese consists of 48% fat. 

The fat content ‘48+’ refers only to the solids. So it is not the case that a 100-gram piece of cheese contains 48 grams of fat. The fat content in grams will then be between 28 and 32 grams (48% of 60 grams).

The meaning of the plus sign

The plus sign indicates the difference in fat content in a young and an old cheese. Because an old cheese has matured longer, it contains less moisture and more solids. So this also means that there is proportionally more fat in old cheese than in young cheese. Although this difference is not super large, the difference is there and a + sign is added to the fat content.
