Grass cheese
Grass cheese is a delicious soft cheese and is available for a limited time. In fact, the grass cheese season runs from late May to mid-November. This is due to the growth of fresh grass on the land. Grass cheese is made from the milk of cows that are allowed back into De wei for the first time. After the cold period they are eating fresh grass for the first time and this can be tasted in the milk. The fresh grass makes the cheese deliciously soft and Romig.
Grass cheese, May cheese and September cheese
The condition of grass cheese is that it must have had at least 4 weeks to mature. Since the cows go back into De wei at the beginning of April, the grass cheese is ready to be eaten at the end of May. For this reason, grass cheese is also called May cheese. Would you like to buy this May cheese? Then be quick about it. In fact, grass cheese that is aged a little longer is also sometimes called September cheese. This farmers September cheese is certainly not inferior and has a delicious taste.
The taste of grass cheese
After having spent the whole winter in the barn and eating only bix and hay, the cows are very happy to go back to De wei. They hop around happily and eat from the fresh grass again. The fresh grass ensures that the cheese made from the milk has a much milder and creamier taste.
