Whole Dutch goat's cheese young
As the name suggests, this cheese is made from goat's milk. These cheeses have a typical nutty and slightly sweeter taste. This young variety is deliciously mild.
In addition, goat's cheese also has a much whiter colour than cheese made from cow's milk. This has everything to do with the grass the goats eat.
Of course, cows also eat grass. However, cows convert the chlorophyll of the grass into catopeen, an orange dye. This then ends up in the cows' milk, giving it a yellowish colour.
Goats, however, convert the leafy green of the grass into the colourless vitamin A. This makes the goat's milk much whiter.
