Extra perennial North Holland
At the base of this special North Holland regional product is of course the milk of these cheeses. Our North Holland cheeses owe their flavor to the vast North Holland polders. The soil in this region is naturally a bit Ziltig and this produces pasture milk that is naturally delicious Romig.
North Holland cheeses have been declared a protected regional product by the EU. This means that the cows giving the milk must graze in North Holland pastures, the cheese factory must be located at Noord-Holland and the cheese must be made according to traditional recipes.
Traditional ripening
In our own traditional aging house, these cheeses are aged on wooden boards. Our extra-mature North Holland cheeses are given at least 2 years to mature.
In 2 years a characteristic flavor develops, but despite the time in the aging house it still remains delicious Romig. To allow the cheeses to mature evenly, they must be turned with some regularity. Of course, we do this by hand for the best results.
Processing extra mature North Holland cheese
Extra Overjarige Noord-Hollandse is a delicious characteristic cheese that, despite its age, is still easy to slice. It is perfect with a good glass of wine and makes your cheeseboard complete. You can also eat this extra mature cheese on a sandwich, or just eating it on the go.
