Extra overaged North Holland cheese
The basis of this special North Holland regional product is of course the milk of these cheeses. Our North Holland cheeses owe their flavour to the vast polders. The soil in this region is naturally a little salty and this produces pasture milk that is naturally deliciously creamy.
North Holland cheeses have been declared a protected regional product by the EU. This means that the cows giving the milk must graze in North Holland pastures, the cheese factory must be in North Holland and the cheese must be made according to traditional recipes.
Traditional ripening
In our own traditional maturing house, these cheeses are aged on wooden boards. Our extra-aged North Holland cheeses are given a minimum of 2 years to mature.
Over 2 years, a distinctive flavour develops, but remains nice and creamy despite the time in the maturing house. To let the cheeses ripen evenly, they need to be turned with some regularity. Of course, we do this by hand for the best results.

Extra old North Holland is a delicious characteristic cheese that is still easy to slice, despite its age. It is perfect with a good glass of wine and makes your cheeseboard complete. You can also enjoy this extra-mature cheese on a sandwich, or simply on the go.
