Stolwijk extra mature
Our extra matured Stolwijk cheeses are given a minimum of 32 weeks to mature. This gives the cheeses time to develop a delicious spicy flavor without losing its creaminess.
Cheese doesn't get any more pure than Stolwijk cheese. At the base of these cheeses is daily fresh milk. Then these cheeses are made by hand. Everything in the process affects the cheeses. Even the cows' feed affects the taste of these cheeses.
The final step in the process is the ripening of the Stolwijk cheeses. Our cheeses are still ripened in the traditional way in our ripening house. Our cheeses are placed on wooden boards where they are turned over regularly. This ensures that the cheeses ripen evenly.
