At the base of this special North Holland regional product lies, of course, the milk of these cheeses. Our North Holland cheeses owe their flavor to the vast North Holland polders. The soil in this region is naturally a bit Ziltig and this produces pasture milk that is naturally delicious Romig.
North Holland cheeses have been declared a protected regional product by the EU. This means that the cows giving the milk must graze in North Holland pastures, the cheese factory must be located at Noord-Holland and the cheese must be made according to traditional recipes.
Traditional ripening
In our own traditional aging house, the cheeses are aged on wooden boards. Old North Holland cheeses are given at least 1 year to mature.
During this time the cheese gets the time to develop a delicious characteristic flavor, without losing its creaminess Our cheeses are regularly turned by hand. This ensures that the cheese remains top quality and can mature evenly.
